An Ambrosial Autumn Recipe.

As we say goodbye to summer and hello to autumn, this weekend we will be preparing for those colder starts and shorter days! But with this comes excitement for Hot Chocolates, Woolly Jumpers and Pumpkins! Whether autumn for you means curling up under a warm blanket or running through piles of crunchy red and brown leaves, we can’t wait for it all to begin.

 

With Halloween around the corner,  it’s never too soon to start thinking about what treats you might indulge yourself in over the coming colder months. From toffee apples and gingerbread, to mulled wine and spiced lattes; there is an abundance of seasonal treats to indulge in. One of our favourite flavours is Pumpkin Spice and we have an easy heartwarming recipe for you, full of slow releasing energy and super tasty too!


Pumpkin Spice Flapjacks.

Ingredients:

100 g. golden syrup

100 g. soft light brown sugar

125 g. unsalted butter, softened

250 g. rolled porridge oats

75 g. pumpkin seeds

1/4 tsp. ground cinnamon

1/4 tsp. nutmeg

1/4 tsp. ground ginger

A pinch of salt

50 g. Dark chocolate chips. (optional)

 

Method:

1:

Preheat the oven to 180C fan/gas mark 6. Line a 20cm square baking tin with greaseproof paper.

2:

Combine the syrup, sugar, butter, oats, pumpkin seeds, spices and salt (and chocolate chips if you have decided to use them) in a large bowl and mix until they all come together.

3:

Press the mixture into the lined tin with the back of a spoon, then bake for 20­–25 minutes, until golden brown all over. 

4:

Remove from the oven then turn out of the tin and leave to cool for 20 minutes.

Cut into squares once completely cooled.
